Pick your desired finish
Deep gold
The mahogany glow you see on bakery croissants.
Standard golden
Classic shiny brown, the all-purpose default.
Glossy / shiny
High shine, lighter color. Great for challah.
Pale, set
Just-set white, no color. For light sweet pastries.
Matte rustic
Soft sheen, no gloss. For rustic breads.
No wash (crusty)
Bare crust. For crusty breads, baguettes.
The wash
Standard golden
Recipe
1 whole egg + 1 tsp water
Application
→ Whisk thoroughly until uniform.
→ Strain through a fine sieve to remove chalazae (those white strings).
→ Brush with a soft pastry brush in one direction. Avoid pooling.
→ For double-coat: brush, let dry 5 min, brush again.
